These Lion's Mane mushrooms are proudly grown ourselves using the same culture and bags that can be purchased for home-fruiting in our shop.
Immediately after picking, the mushroom fruiting bodies are freeze-dried for ultimate freshness!  Freeze-drying uses a deep vacuum and ultra-low temperatures to remove all water with absolutely minimal impact on flavor, aroma, appearance, and medicinal qualities of the mushrooms.  This is unlike standard dehydration which uses heat to evaporate the water, degrading the material in the process.
Lion's Mane mushrooms are considered both a culinary delicacy and a medicinal powerhouse.  Their medicinal value is largely attributed to terpinoid compounds that may stimulate neurogenesis in the brain and peripheral nervous system.  This is thought to aid with general cognitive health, mental clarity, and sustained attention.  Research suggests it may help slow cognitive decline associated with stress or aging, and may have some benefits for depression or anxiety.  The beta-glucan content is also thought to benefit the immune system and may help reduce inflammation.
Lion's Mane mushrooms are approximately 85% water when fresh, which means this 1 oz. pouch is equal to 6.5 ozs. of fresh mushrooms.
Mushrooms are packaged in a heat-sealed recloseable mylar pouch containing 1 oz (28 grams) of freeze dried H. erinaceus fruiting bodies with a food-grade silica gel desiccant pack enclosed.
